Ingredients:
- 1 cup of cooked quinoa
- 1 medium zucchini, diced
- 1 red bell pepper, sliced
- 1 large carrot, thinly sliced
- 1 red onion, sliced
- Olive oil
- Salt and pepper to taste
- Juice of 1 lemon
- Chopped cilantro leaves (optional)
Instructions:
- Preheat the oven to 200°C (392°F).
- In a baking dish, place the zucchini, red bell pepper, carrot, and red onion.
- Drizzle the vegetables with olive oil and season with salt and pepper. Mix well.
- Roast the vegetables for about 20-25 minutes or until they are tender and lightly golden.
- In a bowl, mix the cooked quinoa, roasted vegetables, and lemon juice.
- Season with salt and pepper to taste.
- If desired, add chopped cilantro leaves as a garnish.
- Serve cold or slightly warmed.
