Ingredients:

  • 1 cup of cooked quinoa
  • 1 medium zucchini, diced
  • 1 red bell pepper, sliced
  • 1 large carrot, thinly sliced
  • 1 red onion, sliced
  • Olive oil
  • Salt and pepper to taste
  • Juice of 1 lemon
  • Chopped cilantro leaves (optional)

Instructions:

  • Preheat the oven to 200°C (392°F).
  • In a baking dish, place the zucchini, red bell pepper, carrot, and red onion.
  • Drizzle the vegetables with olive oil and season with salt and pepper. Mix well.
  • Roast the vegetables for about 20-25 minutes or until they are tender and lightly golden.
  • In a bowl, mix the cooked quinoa, roasted vegetables, and lemon juice.
  • Season with salt and pepper to taste.
  • If desired, add chopped cilantro leaves as a garnish.
  • Serve cold or slightly warmed.
